Owner and operator Miryam Gutierrez says her decision to expand, is to better service her returning customers, who are often turned away because the restaurant is always busy on the weekends.   The history behind this successful business starts with the original owner Conchita from Spain, who combined her art as a Flamenco dancer and passion for food.  7 years later, Pepi Herrero took over and continued on with the same theme, however redesigned the menu and family recipes which has become the restaurants trade secret to success. Today, Miryam Gutierrez owns Colmao but not without the wonderful Pepi who finds it hard to keep away from designing the menu and those homestyle authentic flavours!
